Responsibilities Position Summary: The Cook is responsible for the preparation of evening meals for patients and facility staff in accordance with approved menu cycles and production sheets, providing assistance to the morning cook for lunch service preparation. The Cook also assists the Dietary Manager with preparing for special functions and events, and includes Diet Aide responsibilities as needed for the overall operation of the kitchen. Must have at least two (2) years experience in quantity cooking, with a basic knowledge of modified diets. Training in food service sanitation and possession of food service sanitation certification is required. Experience utilizing industrial kitchen equipment and utensils. Some prior kitchen supervisory experience is helpful. The Cook/Dietary Aide is responsible for the preparation of meals for patients and facility staff in accordance with approved menu cycles and production sheets. In addition, the Cook will: Serve meals to all cafeteria customers, clean work area as necessary or assigned, and accept and reconcile deliveries and put away stock. Be responsible for daily documentation on the food production record including temperature checks on meals and equipment. Be capable of ordering, receiving, and properly storing any foods required to maintain the department and able to understand and communicate applicable standards and regulations (e.g., DOH, JCAHO, CMS). Use kitchen equipment such as knives, slicers, mixers, and dishwashers. Have knowledge of essential hygiene factors involved in food preparation and knowledge of cleansing products and the appropriate methods of cleansing a variety of surfaces.
